2. All spirits and wine (excluding “bin tagged” wine) must be requisitioned on an empty for full bottle basis. Each item on the requisition must be supported by an empty bottle returned to the beverage storeroom with the requisition.

3. Beer and other miscellaneous items should be requisitioned to bring stock levels back to established pars.

4. All requisitions should be done and par stocks brought up to par daily to allow proper chilling of those items that may require it.

6. Immediately following the final reconciliation of the issue with the requisition and the empty bottles, all empty bottles are to be broken. This process should be witnessed by a member of management.

7. If the empty bottles cannot be destroyed immediately, the individual filling the requisition must cross through each bottle label (making an “X”) with a black broad tip felt marker. This should prevent any empty bottles from finding their way back into the property for re-use. These unbroken empties must then be secured in the beverage storeroom. Unbroken empty bottles should never be left unsecured.

8. Bartenders are responsible for verifying that their issues and requisitions are reconciled, and that the new inventory is equal to the established, posted par stock.

9. All bar personnel must be instructed to fill out their requisitions in the same sequence in which the perpetual inventory book is organized. This can be easily accomplished by pre-typing or pre-printing the requisitions with the items already listed on them.

10. All requisitions must be signed by the bartender and the person filling (issuing) the requisition.

11. After the requisition is filled and issued, the requisition information should be recorded in the perpetual inventory book. Requisitions should then be filed numerically by area.

12. Beverage requisitions will consist of a three-part form: white (original), yellow and pink. When the bartender completes the requisition, he/she should retain the pink copy and send the white and yellow copy with the empty bottles to the beverage storeroom. After the requisition is filled, the yellow copy is returned to the bar with the issued. The white copy is used to complete the perpetual inventory book and then filed.

13. All beverage requisitions will be maintained on file in the beverage storeroom for one full period after period end.

14. A log should be kept of all items that could not be filled/ issued. This log should be checked whenever beverages are received so all unfilled, back ordered items can be issued. Items requisitioned but not issued should be so noted on the requisition so the bar staff is aware that their pars will be “off”.

15. Discrepancies in bar par audits should first be reconciled with the “out” log before further action is taken.

Cheese are distinguished by flavour and categorized according to their texture. They differ from each other for a

Cheese 1a

number of reasons, mainly arising through variations in the making process. Differences occur in the rind and how it is formed, in the paste and in the cooking process, relating here to both time and temperature. Also cheeses vary because the milk used comes from such different animals as cows, sheep and goats.

Cheese should be stored in a cool, dark place with good air circulation or in a refrigerator. If it is not covered in its original wrapping, it should be wrapped in either cling film or aluminium foil to prevent any drying out taking place. It should also be stored away from food items that absorb flavours/odours, such as dairy produce.

Cheese - Types

Dependent upon use, cheeses may be purchased either whole or preportioned. Depending upon the type of establishment, the latter is more often the case as there is less wastage and no loss in quality, flavour or aroma.

  • The texture of a cheese depends largely on the period of maturation. The recognized categories are:
  • Fresh
  • Soft
  • Semi-hard
  • Hard
  • Blue

Fresh Cheese:-

  • Cottage: unripened low-fat, skimmed milk cheese with a granular curd. Originated in the USA and now has many variations
  • Cream: similar to cottage cheese but is made with full milk. There are a number of different varieties available, some made from non-cow milks
  • Mozzarella: Italian cheese made now from cow's milk but originally from buffalo milk
  • Quark: continental version of cottage cheese, sharper and more acidic than the American versions. Mainly German and Austrian varieties available
  • Ricotta: Italian cheese made from the whey of cow's milk. A number of other Italian varieties are available made from sheep’s milk

Soft Cheese:-

  • Bel Paese: this light and creamy Italian made has a name which means 'beautiful 1 country' and was first produced in 1929
  • Brie: famous French made made since the eighth century. Other countries now make this style of cheese, distinguishing it by the country’s name, eg German brie
  • Camembert: famous French made which is stronger and can be more pungent than
  • Feta:- Greek cheeses made from both goat’s and sheep’s milk
  • Munster: French Vosges cheeses similar to Camembert in shape but with an orange red rind. American, German and Swiss versions are also available

Semi-Hard Cheeses:-

  • Cheddar: classic British cheeses now made all over the world and referred to as, for example, Scottish cheddar, Canadian cheddar
  • Cheshire: crumbly, slightly salty cheese, available as either white or red. It was originally made during the twelfth century in Cheshire but is now made all over Britain
  • Derby: English Derbyshire cheese now more often known by the sage-flavoured variety, Sage Derby
  • Edam: similar to, but harder than, Gouda, this Dutch made has a fairly bland, buttery taste and a yellow or red wax coated rind. It is sometimes flavoured with cumin
  • Emmenthal:- the name of this Swiss cheese refers to the Emme Valley. It is similar to Gruyere, although it is softer and slightly less tasty
  • Gloucester/Double Gloucester: full-cream, classic English, originally made only from the milk of Gloucestershire cows
  • Gouda: buttery textured, soft and mild flavoured well-known Dutch cheese with a yellow or red rind
  • Gruyere:- mainly known as a Swiss cheese but both the French and Swiss varieties can legally be called by this name. It has small pea-size holes and a smooth relatively hard texture. The French varieties may have larger holes
  • Leicester :- mild flavoured and orange coloured made in England

Hard Chese:-

  • Parmesan: classic Italian hard cheese, more correctly called Parmigiano Reggiano, and predominantly known as the grated cheeses used in and for sprinkling over Italian dishes
  • SPecorino: hard, sheep's milk, grating or table cheeses from southern Italy. Also available with added peppercorns as Pecorino Pepato from Sicily
  • Provolone: smoked cheese made in America, Australia and Italy. Now made from cow's milk but originally from buffalo milk. Younger versions are softer and milder than the longer kept varieties

Blue Cheese:-

  • Bavarian Blue: rich, high-fat and sourish made in Germany
  • Blue Shropshire: similar to Blue Cheshire but made in Scotland
  • Danish Blue: one of the most well-known of the blue cheeses. Softish and mild flavoured, it was one of the first European blue cheeses to gain popularity in Britain
  • Gorgonzola: softish, sharp flavoured, classic Italian cheeses with greenish veining, which is developed with the addition of mould culture
  • Roquefort: classic, sheep's milk cheeses from the southern Massif Central in France. The maturing takes place in caves which provide a unique humid environment which contributes to the development of the veining
  • Stilton: famous and classic English cheeses made from cow’s milk; so called because it was noted as being sold in the Bell Inn at Stilton by travellers stopping there. According to legend it was first made by a Mrs Paulet of Melton Mowbray. Traditionally served by the spoonful but nowadays usually (and perhaps preferably) portioned. The pouring of port on to the top of a whole Stilton, once the top rind had been removed, was also popular but this practice is also on the decline. The White Stilton has also become popular and is slightly less flavoursome than the blue variety

Cover, Accompaniments, Service:-

The course is normally offered towards the end of a meal as an alternative to the sweet course. The cover to be laid is as follows:

cheese 5s

  • Side plate
  • Side knife
  • Sometimes a small fork (sweet)

In the service of this course the cover should be laid first and then the * accompaniments set on the table as follows:

  • Radishes, when in season, placed in glass bowl on underplate with teaspoon
  • Castor sugar from cream cheeses

The cheeseboard or trolley will be presented to the customer containing a varied selection of cheeses in ripe condition together with sufficient cheese knives for cutting and portioning the different cheeses. Recognition by waiter of all cheeses on the cheeseboard is of utmost importance.

#Éclair – A finger-shaped bun made by piping lengths of choux pastry onto greased baking trays and baking them until crisp. The cooked pastry is split open and filled with cream or custard and topped with chocolate or coffee icing (frosting). Culinary Terms E s23

#Egg – A roundish reproductive body enclosed in a protective shell. Most commonly eaten by humans is the egg of the domestic hen, but duck, goose, quail, pheasant, guinea fowl, partridge, plover, ostrich, and emu eggs are also used. In some parts of the world the fish-flavoured, soft-skinned egg of the sea turtle is an important food. The egg is a highly nutritious and well-balanced package: two eggs provide half of the body’s total daily protein and vitamin needs. The yolk, about 30% of the total weight of the egg, contains more than 80% of its protein.

Most eggs are from hens caged in large, temperature – controlled and artificially lit sheds. Free-range eggs are from birds with access to outside runs and are reckoned by many to have a better flavour.

Eggs are best used as fresh as possible. Two simple, age-old methods of testing freshness are based on the fact that the little weight and moisture lost each day by evaporation through the porous shell is replaced by air in the sac at the round end of the egg. To assess the freshness of egg either put it in a bowl of water (a fresh egg will sink to the bottom) or hold it up to a strong light (the larger the air sac the older the egg). Alternatively, a fresh egg broken onto a plate will have a well-rounded yolk centered in a thick, sticky white; in an older egg the white is runny and the yolk flattened.

Other eggs besides that of the hen are also used. The more richly flavoured duck egg is eaten in England, Holland, and Belgium and in parts of Asia. The famous ‘thousand-year’ or hundred-years’ eggs of China are usually raw duck eggs, kept for several months buried in a mixture of salt, lime, ash and tea leaves until the shell is marbled black, the white firm and pale brown, and the yolk-veined with a texture of creamy cheese.

The Egyptians ate both ostrich (a single ostrich egg, about twenty times the size of a hen egg, can make an omelette for ten people) and pelican eggs. Peahen eggs were eaten in ancient Rome. In modern time’s pheasant, quail, partridge and plover eggs are used hard-boiled in salads, pickled in brine or preserved in aspic.

Many rites are associated with the egg. From the time of ancient Rome eggshells were crushed to prevent evil spirits from hiding in them. The egg has long been a symbol of fertility and renewal. The brightly wrapped Easter egg of modern times has its origins in the coloured eggs that were a feature of spring festivals of medieval Europe.

#Empanada – A pie or pastry shell filled with meat or fish. The dish originated in Spain where empanadas are now usually made with flaky pastry and are often eaten cold. The dish is now also popular in parts of Central and South America, where it often features spicy meat filling and is served hot as an appetizer.

#EnglishMuffin – A round, flat, unsweetened yeast bun served split and toasted, buttered and spread with jam or honey or a savoury topping.

Ten rules for good service

Ten rules for good service by BNG Hotel Management Kolkata

Ten rules for good service

“When I don't get a good service in a restaurant, I don’t leave a tip, and I don’t feel guilty about it.”  There’s no reason to tip a server (the modern word for a waiter or waitress that solves the gender problem) just because he or she has managed to get the food to the table! Diners have the right to expect and receive good service. Unfortunately, most servers don’t know what good service is. So let’s see if we can help them. Here are the 10 Commandments of Good Service:

[caption id="attachment_8206" align="alignnone" width="1366"]Ten rules for good service by BNG Hotel Management Kolkata Ten rules for good service by BNG Hotel Management Kolkata[/caption]

1. Always be prompt. There is no better way to lose a tip than to leave a guest sitting at the table for 10 minutes waiting for his/her drink, or to make him/her wait 15 minutes to get the check when they are ready to leave.

2. Be pleasant. Never be surly or arrogant is te golden rule for a good service.

3. Be neat and clean. Dirty or un-pressed uniforms are a sure sign of an uncaring, unprofessional server. Even worse are servers who need a bath or ones with hands that look like those of an auto mechanic.

4. Fill requests immediately. There is no such thing as a delayable request from a diner. A request for some mayonnaise to go with a hamburger cannot wait for minutes while another table is served. By that time the burger is cold and everyone else at the table is halfway through their meal.

5. For a good service, be attentive/ receptive. Servers should frequently be within sight of their tables so that guests can catch their eye if they need anything. Having to shout, “Waiter” halfway across a dining room should never be necessary.

6. Be knowledgeable about the menu specials and wine list. Be able to explain items accurately and to make recommendation can easily increase the tip.

7. Deliver the food to the person who ordered it and be vigilant enough to pace the meal so that the entrée doesn’t arrive before the soup is eaten.

8. Be attentive to condiments, bread and water, as well as flatware. Running out of water is not acceptable, as well as not having a spoon to stir the coffee, which was ordered with cream and sugar.

9. Know how to open and serve a bottle of wine properly.

10. Be able to handle unusual major disasters.

Servers should not look disgusted when a table of eight requests separate checks, even if they forget to tell the server until the end of the meal. And the server shouldn’t panic when he or she walks to the table and sees that most of a 4-year-old’s lunch has landed on the floor.

Everything doesn’t have to be perfect to feel that the service was good, but the meal does have to flow smoothly as a result of the server’s attention and guidance.

If the service is just OK, guests usually leave a 5 % tip. If the service is good, guests leave 10 %. But if the server has gone out of his or her way or a guest thinks the service was excellent, they will leave up to 20 % tip.

On the other hand, when the service is bad, guests do not tip and they intend to not complain to restaurant hostesses/Maitre’d or managers (or to the outside environment). Some express their dissatisfaction directly, by not leaving the tip. Next time, if they return to that restaurant, they will just ask for a different server. That is, if they ever return to that restaurant.

CULINARY TERMS V

Culinary Terms V by BNG Hotel Management Kolkata

CULINARY TERMS VCULINARY TERMS V s

#Veloute : A rich. creamy smooth sauce.
#Vermicelli : A very fine pasta.
#Vol-au-uent : Creamed game, meat or fish served in a pastry case.

#Vacherin – A cold dessert consisting of a ring or basket of meringue filled with layers of softened ice-cream and fruit (usually fresh, such as strawberries or peaches, but crystallized (candied) fruits and chestnut puree may also be used), and topped with sweetened whipped cream. Sometimes ice-creams of various flavours are used as the filling instead of fruits.

#Vanilla – The fragrant, slender seed pod, called a ‘bean’, of a climbing orchid. Vanilla is used to flavour creams, sweet sauces, custards, syrups, cakes, and drinks (especially milk-based chocolate drinks). Vanilla beans can be used more than once – they are infused in hot liquid until the desired strength of flavour is reached, then removed, rinsed and dried for further use. Vanilla sugar is made by burying vanilla bean in a jar of sugar – the longer it is left, the stronger the flavour becomes.

The vanilla orchid is native to Central America. The pods are gathered, drenched repeatedly in hot water, and left in the sun to sweat and then dry out. They shrivel, darken and produce a coating of vanillin, the strongly scented crystalline substance which gives vanilla its distinctive aroma and flavour. The finest beans are deep brown, pliable, and covered with a frosting of vanillin. Vanilla essence (a liquid made from the bean which is very powerful and should be used sparingly) and vanilla sugar are also available; imitation vanilla essence is a chemical attempt to synthesize the flavour of true vanilla.

#Victoria Sponge – A sponge cake used as the base for queen cakes, jam sandwich cake and castle pudding. The sponge is named after Queen Victoria, who spent part of each year on the Isle of Wight, where the cake was served regularly at tea parties.

#Vol-au-Vent – A round pastry case of puff pastry filled after baking with chicken, seafood, veal, or mushrooms bound with a creamy sauce. It is served hot as a first course or in bite-sized portions as finger food. The cases should be filled just before serving or the pastry will lose its crispness. The vol-au-vent was created by nineteenth-century Parisian Chef and pastry cook Carême, who wanted a puff pastry first course of such delicacy that ‘it flew away in the wind’. Ready-cooked vol-au-vent cases are available.

#Indienne : A dish served in the Indian manner.
Infusion : The liquid extraction derived from steeping a substance such as coffee. tea.herbs etc..in boiling water.

#Ice-Cream – A frozen dessert made of sweetened cream or rich milk, sometimes thickened with egg or gelatin, variously flavoured and churned while partially frozen until of a smooth consistency. Ice-cream is available commercially in many forms and flavours (include low-fat versions) or it can be made at home. It can be flavoured with vanilla, chocolate, caramel, honey, coffee, spirits, or liqueurs; chopped nuts, pieces of honeycomb or pureed fruit can be stirred through.

A home made ice-cream will freeze harder than commercial one; if too hard, move it from the freezer to the refrigerator half an hour before serving; home made ice-cream is best eaten within 48 hours of being made.

#Ice-cream is descended from the flavoured ices eaten in China some 3000 years ago, the semi-solid iced fruit drinks of ancient Persia (the word ‘sherbet’ comes from sharbia, the Arab word for ‘drink’) and the ice sorbets of the Moghul emperors of the sixteenth century India. Thirteenth-century Venetian traveler Marco Polo returned from China with tales of frozen sweet cream dish; kulfi is an ancient Indian dish made with milk boiled until thick and then frozen. In sixteenth century the Florentine cooks of Catherine de’ Medici, bride of France’s Henri II, introduced the French to the frozen cream confection gelati; it was quickly taken up by fashionable Parisian cafés who served it in small silver bowls. The ice-cream churn invented by American Nancy Johnson in 1846 enabled good quality ice-cream to be made at home; it also made it possible to mass produce ice-cream and sell it commercially. The best ice-cream churns are electric or hand operated with salt and ice placed around the outside of the bucket containing the ice-cream. When the paddle stop, the ice-cream is ready.

#Icing – A sweet coating usually made with icing (confectioners’) sugar and butter, used to decorate cakes and biscuits (cookies).

#IcingSugar (Confectioners’ Sugar) – finely powdered granulated sugar use to make icings and frostings and in confectionery. Icing sugar mixture has a small amount of cornflour added to prevent it from drying out and turning lumpy during storage.

Île Flottante (Floating Island) – A dessert consisting of rich custard topped with an island of baked meringue coated in toffee or caramel. It is some times decorated with crushed praline (a confection of nuts and caramelized sugar) or toasted slivered almonds.

#IrishSodaBread – Bread made with buttermilk or sour milk and leavened with bicarbonate of soda (baking soda). Currants, raisins, and caraway seed are often added. Soda bread is a specialty of Ireland and is baked in homes and bakeries throughout the country.
